Pan Bread Pudding with fruits

Although I love baking I don’t like to fuss with long and complicated recipes that would take hours to take. Few years ago when I worked with elderly people one sweet lady shared her bread pudding recipe that she always made for her husband. Through time I tried out different ways of making this recipe. So here is my summer version of bread pudding:

  • 1 cup pulled apart bread
  • 2 eggs
  • 1/2 cup milk
  • 3 tbs coconut sugar
  • 1 tsp vanilla
  • 1 tbs butter
  • fruits ( I used 1 plum and 3  strawberries)
  1. Whisk eggs and add milk. Add coconut sugar and vanilla to the mixture.
  2. Add bread to the liquid mixture and let it soak for two minutes.
  3. Melt butter in the pan and add the mixture.
  4. Place sliced fruits on top of the mixture after 5 minutes of cooking.
  5. Cook with closed lid for about 10-15 minutes on the low heat.

*You can use 2 tbs of white sugar instead of coconut sugar.

French Crepes

Hello everyone! This Sunday is Mother’s day and I wanted to start off this blog post with saying Happy Mother’s day to all you wonderful moms out there. I wanted to share this very quick and easy crepes recipe that is great to make on days like this one. The whole process of making the batter and cooking the crepes takes me about 15 minutes.

  • 2 eggs
  • 1 cup all-purpose flour
  • 1/2 cup of water
  • 1/2 cup of milk
  • 1/4 teaspoon salt
  • 2 tablespoons butter,melted


  1. In a large bowl whisk together flour and eggs. Gradually add in the milk and water. Add salt and butter, beat until smooth.
  2. Heat lightly oiled frying pan over medium heat. Pour approximately 1/4 cup of batter onto the pan.
  3. Cook each crepe for about 2 minutes, until the bottom is slightly golden.

You can serve these crepes with anything . I personally prefer to have it with Nutella and fruits.

After getting tired of eating store bought Madeleines I wanted to find a recipe that I can make myself. Most of the recipes were somewhat complicated and although I am good at baking I like it to be simple. I usually make these cookies whenever there is a party and I would need to bake in big quantities. They are very simple, fast to make and very tasty.


Bake time: 10-12 min

  • 1 cup (150 g) sugar
  • 3 eggs
  • 1 pinch of salt
  • 1 1/2 (150 g) flour
  • 1/2 teaspoon baking powder
  • 3/4 cup of butter (melted)
  • 1 lemon rind grated
  1. Preheat oven to 360 F (180 C) for medium cookies
  2. In a large bowl whisk eggs, sugar and salt until the mixture whitens.
  3. Add the flour,baking powder, melted butter, grated zest, mix well and pour into molds.
  4. Cook for 10- 12 min. Let it cool on the rack for about 5 minutes.

German Apple Cake Recipe

If you are looking for a cake recipe that doesn’t require hours to make and that taste amazing then this might be the one for you. I found this recipe around ten years ago when I was starting to learn how to bake and ever since this has been favorite cake in my family.



  • 1/2 cup unsalted butter (melted)
  • 1 cup sugar
  • 2 eggs
  • 1 cup all purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla
  • 2 large tart apples
  • 1 1/2 teaspoon cinnamon
  • 1/2 teaspoon sugar
  1. Preheat oven 350 F. Grease 8×8-inch baking dish.
  2. Combine melted butter, sugar (1 cup), and eggs in a large bowl and beat.
  3. Add flour,baking powder, and vanilla and beat until well blended. Spread evenly in a dish.
  4. Combine sugar (1/2 teaspoon) and cinnamon.
  5. Peel and core apples, thinly slice into large bowl.
  6. Add sugar-cinnamon mixture to apples. Arrange slices on top of batter in overlapping rows.
  7. Bake 1 hour.
  8. Let it cool for 15 minutes

Peanut Butter Cookies

Peanut butter cookies are some of my favorite cookies to make on a cold rainy day. And the best part is that they are very simple and quick to make.


  • 1/2 cup granulated sugar
  • 1/2 cup brow sugar
  • 1/2 cup unsalted butter,softened
  • 1/2 cup creamy peanut butter
  • 1 large egg
  • 1 tsp vanilla
  • 1 1/2 cups flour
  • 1 tsp baking soda
  • 1/2 tsp salt


Baking time: 10-12 minutes

Temp: 350 degrees

  1. Cream butter and sugars together.
  2. Add egg, peanut butter, and vanilla.
  3. Add flour, baking soda, and salt. Mix well.
  4. Scoop the dough with a spoon and place on the oven tray.
  5. Cook for 10-12 minutes. Let cookies cool for 5 minutes.

Apple French Toast

French Toast is one of my favorite things to make when I am craving something sweet but don’t want to spend long time making it. This recipe  is especially great for this cold  time of year because it has a hint of cinnamon.


  • 2 eggs
  • 1/2 cup milk
  • pinch of salt
  • 1 teaspoon vanilla
  • 1 tablespoon sugar
  • 1/3 teaspoon cinnamon
  • pinch of nutmeg
  • 1 tablespoon sugar
  • 5 slices of bread


  • 1 apple
  • 1 tablespoon butter
  • 1 teaspoon cinnamon
  • 1 teaspoon sugar
  1. Beat eggs with milk. Add all the other ingredient.
  2. Dip bread slices into liquid mixture.
  3. Fry the bread in the heated pan until both sides golden.
  4. Dice apples.
  5. Melt butter in a small pan and add apples
  6. Add sugar and cinnamon
  7. Cook apples for 2 minutes
  8. Add apples on the toast and to make it extra special add maple syrup (optional)
